Midnight Cobbler

The batter goes over the fruit, never stirred into it. It sinks at first, then rises back up through the berries as it bakes, so you end up with a golden top and jammy fruit underneath.

Ingredients

Serves 8. Tap one off as you go.

Method

  1. Preheat the oven to 350F.
  2. Slice the butter into pieces and add them to a 9x13 inch baking dish. Put the pan in the oven while it preheats so the butter melts, then take it out.
  3. Add the mixed berries, sugar and lemon zest to a bowl and stir to combine.
  4. In a separate bowl, mix the batter ingredients: flour, sugar, baking powder and salt. Stir in the milk, just until combined.
  5. Pour the berries over the melted butter in the pan. Drizzle the batter over the top. Sprinkle with a little cinnamon.
  6. Bake at 350F for about 20 minutes, until lightly golden on top.
